Day 3 VLCD

What a beautiful day today is... down to 174.8, 11.3 of loading weight gone already! Tom is in full swing, uninvited and unexpected as usual of course. Enjoying some hazelnut coffee to get the morning started and planning my day. Memorial Day weekend is usually packed with activities, sales, outings, and friends aplenty... this all of course with food temptations! It's hard to decide what to do and how best to avoid temptations. I've taken to lugging around water bottles, coffee cups, and tea bags to make my own refreshments wherever I go. It's also nice to have an apple at the ready or to make a strawberry smoothie before heading out. There's a bag of 'living butter lettuce' in the fridge that I am looking forward to this weekend, sweet crunchy love of lettuce! Time to pack up and head out... I'll finish this later!
What a day. Made some Melba toast with toffee capella n stevia for flavoring. Using 1cup all natural whole red wheat flour and 3/4 c water I made the dough. Very thick, and harder to spread, I use parchment paper and a cookie sheet. Spreading out the dough to cover the entire sheet I pop it in the oven at 385 for 30 min. Flip the dough sheet half way through cooking and when it's done grab the pizza cutter and make yourself 40 little squares of heavenly toast!
I have had insatiable cravings today, went nuts on tea and water, a lil overboard with the CD and now after an extra heaping of salad in my dinner, I'm looking forward to my apple snack! When craving I will thin slice the apple and lay out the tiny morsels on the convection oven pan, sprinkle with cinnamon n stevia, bake at 300 for ten min and then savor every last slice of 'apple pie' heaven! Tomorrow is a new day and I have an early morning planned. Off on errands, then a little more menu work!

Day 2 VLCD

Thanking the release Gods, morning weigh in 178.5... now that's a good start! Headed to the kitchen with a little extra pep this morning, smiling as I decide on today's coffee flavor. Vanilla custard to start today! Counting out 4 hours from wake up, it's time for lunch. Weighing out my chicken, it's time to broil with garlic and onion powder. Served on a bed of baby spinach lunch was delicious. Time to spend some quality time on line with my gals and to research some ideas for this week's menu. It's a beautiful day out and after getting some afternoon air, it's time to start dinner. I have an incredible urge to eat all the CD in the freezer, ahh.... Tom is visiting. How wonderful for him to stop by. I wondered where the fullness of breast had come from. I know the loading helps, however they are a bit on the fuller side today. Perhaps a detox bath soon. It's been a great day of catch up and touching base, off to say some kind words and prayers... Happy releases!

Lunch - Grilled chicken on bed of baby spinach
Snack - Apple
Dinner - Baked chicken with steamed spinach in lemon, garlic, coconut oil, and nutmeg
Snack - Apple heated with cinnamon n stevia

Day 1 VLCD

Nervously I stepped on the scale this morning... 186.1! Wow, I knew I had put on the lbs however that's incredible! I did three days of loading prior to my two days with HCG and prior to that I was weighing in at 168-169. Not wanting to be discouraged, I remind myself that the loading weight will fall off in a matter of days and our bodies as amazing as they are, they do not create white fat that quickly! Off to the kitchen for my first round of Coffee... and to fill my water bottle!

Lunch - Chicken and spinach salad with Strawberry Vinaigrette
Snack - Apple
Dinner - Cottage Cheese Cheesecake
Snack - Apple heated with cinnamon n stevia sprinkled on top

Loading Day 2

Hard to believe from 36 cupcakes I'm down to 18! I shared lol... The peanut butter is almost gone, as much as I love Adams, I can't stay faithful with him in the house so he will have to be devoured! I had cereal for breakfast, Cinnamon Toast Crunch... pancakes for dinner made with ricotta cheese, raisin nut bread with home made honey butter for snacking, a chicken bake from Costco, some more pudding... and CUPCAKES!!! Oh how I seem to miss those tasty little morsels on VLCD's I sent the remaining of my 'no-no' foods off to new homes and took out the chicken to defrost. Dusted off the food scale and braced myself for tomorrow's weigh in! I have learned to not weigh on the morning of loading day 2 as it can cause me to not load as fervently as I must! I loved today's constant snacking of trail mix, sipping on wine and plate of cheese n meat snacks, adored the peanut bar and macaroons from girl scouts days gone by... You may wonder how I had time to eat all of these wonderful treats, simple- I lived in the kitchen all day! Around midnight it was time to head to bed, stomach stretched to capacity and fingers swollen, nothing more was going to fit in this girl... well, maybe just another cupcake!

Loading Day 1

Rise and shine... head in the fridge, looking for that heavy whip cream for the coffee... Before the day starts there's a need for my coffee! I am excited to dig into the peanut butter cupcakes I made last night. Coconut Pecan frosting on butter cream peanut butter cupcakes and cinnamon roll cupcakes are lined up on the counter waiting to be devoured! By ten am I am FULL! Still, always room for another cup o' joe! I'm enjoying strawberry shortcake coffee with capella drops n a dash of stevia... doesn't get much better than this! I learned months ago how much better fresh ground and pressed coffee tastes compared to the auto drip and I've become even more of an addict if that was ever possible! The day was somewhat a blur, filled with avacado, pudding, chicken, cottage cheese, chocolate, peanut butter, and more yummy cupcakes! Full and so happily content, it's off to bed to start all over again!
